Harvest

I was cleaning up the garden getting ready to till it for winter. I thought the sweet potatoes were a bust this year as well. Everything else was a bust this year, why not the sweet potatoes? Boy was I wrong. I told Jacob he could dig for some if he wanted. After the fourth one I told him to stop. These things are gigantic!

I only used one of them for dinner. Yum! I made roasted sweet potatoes. I peeled the largest one and cubed it and drizzled it with olive oil and topped it with cinnamon. So yummy! The largest one fed my entire family (and what appears to be a mole family, as well). There was a big section chewed on, which I cut off.

This was the first year I planted sweet potatoes. I was inspired by my friend Shawn. She grew them last year and convinced me that they were so easy. She was right. Amidst the weeds and neglect we still have plenty. God is good!

I am a work at home Mom of two of the best boys ever. I am a Nationally Certified Master Groomer and have been grooming out of my home for the last 12 years. We have recently moved to Greenbrier Tn on 27 acres. We are new to the "homesteading thing" but we are excited to learn. We hope to be filling our farm with many critters and a garden. We are homeschoolers so everything is a unit study to us. It has been fun to see the boys help Dad cut firewood. We will also be learning how to build a chicken coop in the near future as well. I have been making handcrafted soap lately as well and I am seeing an improvement in that business as well. It is all natural vegetable and goat milk based soaps. Can't wait to share this experience with everyone.

    We haven’t had luck with sweet potatoes but we’re going to try again next year. Congratulations on your success. Now that I’ve found your blog I’ll have to catch up on some more reading.
